Instructions In a medium saucepan, cook the tortellini following the package directions. Drain. Add ½ the pesto while the tortellini is hot and stir to combine. Once the pasta is cool, add the mozzarella, olives, cherry tomatoes, sundried tomatoes, walnuts, salt and pepper. Add the remaining pesto and the chopped basil. Gently mix. Before serving, garnish with chiffonade cut basil.

Green Bean Salad

Instructions
Clean the green beans, washing them and removing the ends. In a large pot, bring enough water to a boil to fit the beans. Salt the boiling water. Put the beans in the boiling water. When the water returns to a boil, put your timer on for exactly 2 minutes. Immediately take the beans out of the boiling water and submerge in an ice bath.
Drain the beans and put them in a large bowl. Add the oil, salt, lemon juice and garlic. Toss until all the beans are coated. Serve |
Chopped Salad

There is nothing easier than this salad. You can use any ingredients that you have on hand and it is delicious. When you chop all these vegetables up small, it releases an enormous amount of flavor. I usually only add salt and pepper to this salad. The vegetables cut so small give off lots of natural juice. If you are watching your weight, this is the salad for you.
