Strawberry Walnut Salad

Strawberry Walnut SaladWhat a refreshing salad this is.  The fresh strawberries give it delicious flavor while the sugared walnuts give it a great sweetness.  The poppy seed dressing ties everything together.

 

 

Ingredients

Salad
9 Cups Greens – combination of Baby Spinach and bite sized pieces of Romaine Lettuce
6-8 Strawberries
1 Cup Walnuts

Poppy Seed Dressing
¼ Cup Sugar
2/3 Cup Vegetable Oil
¼ Cup Vinegar
2 tsp Poppy Seeds
1 tsp Salt
1 tsp Prepared Mustard

Sugared Walnuts
1 Cup Walnuts
6 TBSP Sugar
2 TBSP Water

 

Instructions
Poppy Seed Dressing
Put all the ingredients in a jar with a tight fitting lid and shake until combined.  Refrigerate until needed.

Sugared Walnuts
In a small sauce-pan, heat the sugar and water.  Add the walnuts and toss, making sure they are thoroughly coated.  Continue simmering them on the stove, over low heat until all the liquid is absorbed. Then lay them flat in a dish and let them cool.  Just before they are completely cool, loosen them from the dish and let them continue to cool.


Assembling the Salad
Cover the bottom of a flat-bottomed bowl or a platter with the greens.  Slice the strawberries and arrange on top of the greens. Sprinkle the walnuts on top. Serve.

Mandarin Orange Salad

Mandarin Orange Salad

 This salad is delicious.  The mandarin oranges are sweet and delicious and the candied almonds are truly amazing.  Once you have this salad, it will definitely be in your recipe rotation.

 

Salad Ingredients

1 Head Iceberg Lettuce (You can use any lettuce you like)
1 Head Romaine Lettuce
1 Cup Celery – chopped
½ Red Onion
1 11-oz can Mandarin Oranges
1/2 Cup Slivered Almonds
3 TBSP Sugar



Poppy Seed Dressing
¼ Cup Sugar
2/3 Cup Vegetable Oil
1 tsp Prepared Mustard
2 tsp Poppy Seeds
¼ Cup Vinegar
1 TBSP Parsley – chopped
½ tsp Salt
¼ tsp Black Pepper

 

Salad Instructions
Wash and dry the lettuce.  Cut into bite-sized pieces.  Add the celery.  Chop the red onion and add it to the bowl. In a heavy bottom frying pan, combine the sugar and almonds.  Cook until the sugar is melted and coats the almonds.  When the almonds are cool to the touch, break them apart and place them in a separate dish.  If you leave them to cool in the frying pan, they will stick together and you may not be able to separate them.
Once cool, add to the salad.  Top with the mandarin oranges.

 

Dressing Instructions
Combine all ingredients in a jar with a tight fitting lid and shake vigorously.

 

Chopped Salad

Ingredients
Lettuce – any kind

Cherry Tomatoes
Red Bell Peppers – or any color
Onion
Cucumber
Avocado
Green Beans
Artichoke Hearts
Black Olives
Slivered Almonds
Salt and Pepper
Dressing is optional
Instructions
Chop all ingredients the same size and put in a bowl.  Sprinkle with salt and pepper.  Add dressing as desired.

Zucchini Salad

Zucchini Salad 1
Raw zucchini is almost better than cooked zucchini.  It has a crisp texture that stays for a long time.  This dressing is so simple, but so good.  The pine nuts add a decadent touch.
Ingredients
2 Small Zucchini
1/3 Cup Olive Oil
2 TBSP Lemon Juice
¼ Cup Pine Nuts, toasted

1/2 Cup Basil – chopped
1/4 tsp Red Pepper Flakes
Parmesan Cheese shavings
1 tsp Salt
½ tsp Black Pepper

 

 

 
Instructions
 Cut the zucchini either in small round pieces or you can use a vegetable peeler and make ribbons.  Put the zucchini in a colander and sprinkle with salt.  Let sit for ½ hour until some of the water comes out of the zucchini.  Rinse very well.In a medium bowl, combine the zucchini, olive oil, lemon juice, toasted pine nuts, basil, red pepper flakes, salt and black pepper.  Mix thoroughly.  Add the Parmesan shavings before serving.
