Oatmeal Butterscotch Cookies

Oatmeal Butterscotch Chip

Oatmeal cookies are delicious.  Add butterscotch chips and pecans and you have a real winner.  

 

 

Ingredients

1 Cup Butter (2 sticks)

1 1/4 Cups Packed Brown Sugar

3/4 Cup Sugar

2 tsp Vanilla Extract

2 Eggs

1 1/2 Cups All Purpose Flour

1/2 tsp Baking Powder

1/2 tsp Salt

3 Cups Old Fashioned Oats

2 Cups Butterscotch Chips

1 Cup Pecans, chopped

 

Instructions

Heat oven to 350º

Beat butter, sugars and vanilla on medium speed of electric mixer until creamy.  Beat in eggs until light and fluffy.  

Mix in flour, baking powder and salt on low until blended.  Stir in oats, chips and nuts.

Form dough into 2-inch balls.  Place 2 inches apart on ungreased cookie sheet.  (I always use parchment paper)

Bake 16 to 18 minutes until edges are golden brown, but still soft in center.  Cool on cookie sheet 2 minutes, then remove to wire rack to cool completely. 

 

Baked Oatmeal


Baked Oatmeal

Oatmeal can be bland, but this is fabulous.  The apples and nuts give it that extra crunch and the cinnamon and vanilla gives it a great flavor. 
 

 

 Ingredients
1 Cup Oats – Regular oats not instant
1 Cup Milk
1 Apple, peeled, cored and diced
¼ Cup + 2 TBSP Walnuts, chopped
½ Cup + 2 TBSP Light Brown Sugar
1 Teaspoon Vanilla Extract
1 Teaspoon Cinnamon
1 Teaspoon Baking Powder
1 Egg, lightly beaten
2 Tablespoons butter, melted
Pinch of Salt

 

Instructions
Preheat oven to 350º.   Grease the bottom of a baking dish or ramekins.  Mix the oats and milk together to soak.  In a separate bowl, mix the diced apple, ¼ cup chopped walnuts, ½ cup brown sugar, vanilla extract, cinnamon, baking powder and salt.  Mix to combine all ingredients.  Stir in the lightly beaten egg and the melted butter.  Add the oat and milk mixture and thoroughly mix all ingredients together.  Pour into baking dish and top with the extra 2 tablespoons of brown sugar and walnuts.  Bake for 20 minutes.
