Ambrosia Salad

When my children were small, they asked me to make this for every family gathering.  The fruit and cool whip really make it a light dessert. The chocolate chips just take it over the top. 
Ingredients
1 29-oz Can Fruit Cocktail
1 29-oz Can Mandarin Oranges
1 20-oz Can Pineapple Chunks
2 Cups Flake Coconut
1 Cup Chocolate Chips – Chopped
1 Cup Walnuts – Chopped
2 Cups Mini-Marshmallows
1 16-oz Jar Maraschino Cherries
1 16-oz Container Cool Whip

Instructions
Drain the fruit cocktail, mandarin oranges and pineapple chunks completely.  Add them to a large bowl.  Add the coconut, chocolate chips, walnuts, marshmallows.  Drain the cherries and remove the stems before adding to the bowl.  It is optional to add the cinnamon or nutmeg.  Fold in the cool whip.

Chill at least 3 hours before serving.

Fruit Salad

Fruit Salad top

 

Fruit salad is so refreshing any time of year.  My local supermarket has all the melons and berries all year round, so this is not just for summer any more.

Ingredients
Watermelon

Cantaloupe
Pineapple
Blueberries
Strawberries
Kiwi

Glaze
2 TBSP Honey
Juice of 1 lime

Instructions
In a large mixing bowl, cut the watermelon, pineapple, cantaloupe, strawberries and kiwi into bite sized pieces.  Add the blueberries and mix together.   
Combine the honey and lime juice in a separate bowl and mix well.  Pour the glaze over the fruit and stir until all the fruit is coated.
Chill.  Serve cold.

Dessert Salad

Ingredients
16oz Cool Whip
1 3.4 oz pkg Instant Vanilla Pudding
3 Large Granny Smith Apples
6 Snickers Bars
1 Cup Walnuts 
Caramel Sauce
Instructions

Combine the Cool Whip and pudding and mix very well

Chop the apples, removing the seeds and core, then add to the bowl.  Add the chopped snickers bars and the walnuts. Refrigerate at least one hour before serving. Sprinkle with caramel sauce and additional nuts before serving.
