Parsley

Rosemary

Here in the Northeast, we have had a very mild December.  Mild to the point where there is new growth on my butterfly bushes and knockout roses.  I love the warmer weather, but I’m not sure the plants know what’s going on.  We’ll see in the spring.

As for my herbs, they are still going strong. The temperatures are going to drop down to freezing in the next few days, so I decided to bring in the parsley and rosemary that was still going strong in the garden indoors.  The rosemary is so fragrant, it makes the entire room smell amazing.

In between seasons is somewhat of a down time for the garden.  I spent time outside getting the Garden Pole and the Butterfly house inside.  I didn’t have to do it until now because we have been lucky enough to have temperatures in the 60’s for most of December.  We had a few days that actually hit 70º, which is very unusual for New York.

So, with the holidays finished and all put away, I did a little outside clean up, filled the bird feeders and put out the suet for the birds enjoying every minute of it.

Fitbit

FitBitI heard that the Fitbit was the most popular gift this Christmas.  I got mine several months ago and I love it.   Several people from my job participate in the ‘Workweek Hustle’ from Monday through Friday, then occasionally we do the ‘Weekend Warrior’ on the weekend. It is great to sync your Fitbit to see how you are doing and who’s in the lead.  Then, you MUST comment on who just pulled ahead of you.  It’s so much fun.

This being the first week after New Years, everyone is participating in the challenge.  Right now, we have 9 people, but anyone could invite more people.  The more, the merrier.

In addition to the exercise, the camaraderie between everyone is great.  We push each other to keep up and to stay on a healthy eating plan.

So, here is my proposal, I will post my steps every day and my weight progress along with light recipes and we will create a challenge of our own.  Respond every day with your steps and we will have fun together.

Dalia closeup Yellow

There are so many things that go on in our day-to-day lives that warrant a post.  Besides the big stuff like weddings, anniversaries, birthdays and births, all the little things also have a huge impact on my days, weeks and months.  So there is no better time to start documenting the year than January.

2016 is going to be a great year! I can feel it.  On New Year’s Eve, I am one of those people who make resolutions and a long list of all the things i want to accomplish in the coming year.  I am also the one who eats 12 grapes at midnight, wears red underwear and eats pork on New Year’s Day, but that’s another story.  This year, I didn’t make any lists or resolutions. The only thing that I resolved to do is anything that I start, I will finish.

Now, there are plenty of things that I have finished throughout the years, but there are those projects that got interrupted and I never returned to.  Last year, I started crocheting a blanket for my granddaughter that I haven’t completed.  That is definitely the first project that I will finish before I tackle anything else.  Now, I do have lots of projects in mind that I want to get to this year, but this will be first.  I will let you know how it’s coming.

I hope you stay with me for the year and together we can make 2016 great.

Let’s get started.

Christmas Decorating

Christmas Snowmen

I like to keep the Christmas decorating as easy as possible.  It helps me be able to keep everything looking good and it make the house feel warm and comfortable.  These 2 snowmen were given to me as a gift about 10 years ago.  They are not expensive, but when I look at their faces, it always puts a smile on my face and the faces of everyone who looks at them.  I know this because of all the comments I get about them.

Christmas Tree 2015

My tree is very traditional.  I have been collecting ornaments since the first year I was married.  As the family grew and changed, I got ornaments to detail every event.  Sports teams, animals, hobbies, you name it, we have it.  Now when my children come over, they point out all the ornaments to their children and let them know why they’re on the tree.  The ornament that is talked about every year is my son’s picture in a tuna fish can that he made in preschool.  It’s great.

Now, as you can imagine, I have pictures of all 6 of the grandkids.  i also have ornaments from quite a few of the places that I have visited.  Unpacking the ornaments and decorating the tree is so relaxing.  It makes you remember so many things in your life that you tend to put on the back burner when we get so busy. It’s truly amazing.

Christmas Stockings Left

A few years back, I made stockings for my immediate family.  I have everyone’s name on them and I put them up every year.  Two years ago, I had a sleep-over with my 4 oldest grand children and we made salt dough ornaments.  Every year when I put them up, they still tell everyone which one they made and who made all the rest.  It is great to see them so proud of what they created.

Christmas Dining Table

This is my dining room table.  So simple and easy.  I just cut a piece of white burlap and frayed the edges, added some poinsettias in buckets with candles and large ornaments.  Nothing has to be moved when dinner is served and it always looks great.

This is the right side of my mantle.  You can put so many different things on the mantle and it always looks great.  I have a rustic reindeer and angel with an angel nutcracker and bright holiday ornaments and it all fits together.  I tried to have a red theme going this year thats why you see so much red.

Biscotti

Biscotti

Biscotti is delicious.  Whenever I tell people that I make biscotti, they look at me in horror because of how difficult they think it is. But, it isn’t difficult at all.  This is one of the easiest recipes that I have ever made, and it comes out perfect every time.  I didn’t create this recipe (it’s on the internet), but I have made other biscotti recipes and this is the one that I stick to.  The other thing about biscotti is the many variations that you can make. In these biscotti, I put chocolate chips and almonds and they were great.  If you are going to make a new cookie recipe this season, make biscotti.  Your family and friends will definitely be impressed.

Ingredients

1/2 Cup Vegetable Oil

3 Eggs

1 Cup Sugar

1 TBSP Anise Extract

3 1/4 Cups All-Purpose Flour

1 TBSP Baking Powder

Instructions

Preheat oven to 375º.  Grease cookie sheet or line with parchment paper.  In a medium bowl, beat together the oil, eggs, sugar and anise extract until well blended.  In a separate bowl, combine the flour and baking powder.  Stir flour mixture into the egg mixture to form a heavy dough.  Divide dough into 2 pieces.  Form each piece into a roll as long as your cookie sheet and press down to 1/2 inch thickness.

Bake for 25 to 30 minutes, until golden brown.  Remove from the baking sheet and cool on a wire rack.  When the cookies are cool enough to handle, slice into 1/2-inch slices.  Place slices cut side up back onto the baking sheet.  Bake for an additional 6 to 10 minutes on each side.  Cookie slices should be lightly toasted.

Biscotti Variations without changing the basic recipe:

  1.  Dip 1/2 the cookie in melted chocolate
  2. 1 Cup Dried Cranberries; 1 Cup Pistachios or Almonds; 1 Cup White Chocolate pieces or chips
  3. 1 Cup Almonds; 1/2 Cup Dried Apricots
  4. 1 Cup Chocolate Chips
