Potted Pepperoni Sandwiches

This is slightly unusual, but give it a try and it will be requested at every party you throw.  It is so simple, pepperoni and tomato puree.  A few spices and you’re done.  Deliciousness in every bite.

3 6-oz Packages of Sliced Pepperoni

1 29-oz Can Tomato Puree

1 Large Clove Garlic, minced

1 tsp Salt

1 tsp Italian Seasoning

In a medium saucepan, add the tomato puree, minced garlic, salt and Italian seasoning.  Let simmer for 5 minutes.  Add the pepperoni and continue to simmer for 15 minutes.

Serve immediately on hard sandwich rolls.

Pepperoni Pizza

Pizza Pepparoni

Pepperoni is a favorite of everyone.  Kids and adults.  If you make a pepperoni pizza, it will be devoured in minutes

Pizza Dough, I used a store bought one

1 Lb Mozzarella Cheese, shredded

1 Pkg Pepperoni slices

Marinara Sauce

Olive Oil

Salt & pepper

Preheat oven to 450º

There are two ways that I like to cook pizza at home.  I have used both and they are equally good.

Option #1

Stretch the dough into a 9-inch round pizza pan or a baking sheet.  Brush with olive oil. Spread the marinara sauce on the dough, leaving about 1/2 inch from the sides.  Sprinkle with oregano or Italian seasoning, salt and pepper.  Bake until golden brown.

Remove from the oven and add the pepperoni and cheese.  Return to the oven and bake until the cheese is melted.

Option #2

Place a pizza stone or an inverted baking sheet on the lowest oven rack.  Let the oven heat up to 450º – 500º.

Lightly flour a pizza peel.  If you don’t have a  pizza peel a piece of parchment paper will work just fine.  Spread the marinara sauce on the dough, leaving about 1/2 inch from the side.  Sprinkle with oregano or Italian seasoning, salt and pepper.  Add the mozzarella and the pepperoni.

Place the pizza on the pizza stone or baking sheet.  Using the peel, slide the pizza off the peel and onto the heated pizza stone or baking sheet.  If you are using the parchment paper, put the pizza with the parchment paper on the stone or baking sheet.  Bake until the crust is golden brown.
