Avocado Toast

I hadn’t heard about Avocado Toast until recently but I knew that I loved avocados in lots of recipes, so I had to give this one a try.  It is absolutely delicious!!  Whether you have it plain or with toppings, you’re gonna love it!

 

Ingredients

1 Avocado

1tsp Lemon Juice

1 tsp Olive Oil

1 tsp Red Onion

4 Shakes hot sauce

1 tsp Salt

2 Slices toasted thick bread

 

Toppings

Garbanzo Beans

Slivered Almonds

 

Instructions

Add all ingredients to a bowl and mash.  

Serve on toasted bread.  Add toppings as desired. 

 

Meat and Cheese Stromboli

Stromboli DoneThis Stromboli is amazing.  When I put this out, it is devoured within minutes.

 

Ingredients

Pizza Dough – you can get this from your local pizza place or from the grocery store.  Mine sells it in the dairy case.

1/2 lb each Cheese – I used sliced mozzarella and sliced provolone. 

1/2 lb each Meat – On this one, there is sliced pepperoni, ham and salami.  

1 Egg

 

Stromboli1The first thing you need to do is roll out the dough until it is rectangular in shape. You can use a rolling pin or just stretch it with your hands.  I did this one by hand.  Its easy and fast that way.

Then you start adding the meat and cheese.  I started with the Salami, then added everything else.

Stromboli2Now I have everything piled on and it’s time to roll it up.  Unfortunately, I didn’t take a picture after I rolled it.  Sorry.  I’ll try to remember to take it next time.  You know there’ll be a next time, because I love these.  Anyway, roll it long ways.  It’s easy to roll, everything stays together.  At the end, put the seam side down on a baking sheet sprayed with cooking spray.  

Make an egg wash of 1 egg and a tablespoon of water and brush on the entire Stromboli roll.

Bake it in a 400º oven for 45-50 minutes or until it is golden brown.

Roll out your pizza dough until it is rectangular in shape.  Add the meat and cheese layering each one.  Roll the dough from the long side of the rectangle.  Place seam side down on a cooking sheet sprayed with cooking spray.  Brush an egg wash on the entire Stromboli.  Bake in a 400º oven for 45-50 minutes, or until the crust is golden brown. 

Mini Stromboli


Mini Stromboli

 Looking for a quick snack?  Nothing beats these.  Roll out the dough, fill it with sliced meat and cheese  and bake.  So simple, and so delicious.  This is a kid favorite.
Ingredients
Pillsbury Grands rolls (8 rolls)
8 Slices Deli Ham
16 Slices Salami
64 Slices Pre-cut Pepperoni
16 Slices Capicola
8 Slices Mozzarella
1 Egg
Instructions
Preheat oven to 350º.    Work each roll to be a rectangular shape approximately 4 inches long.

 

Option 1:  In the middle of the rectangle, place 1 slice deli ham, 2 slices salami, 8 slices pepperoni, 2 slices capicola and 1 slice mozzarella.  Fold the dough so both ends meet and crimp closed.  Squeeze the sides of each Stromboli closed.

Option 2:  Fill the entire rectangle leaving ¼ inch at each side. Fill the rectangle, with 1 slice deli ham, 2 slices salami, 8 slices pepperoni, 2 slices capicola and 1 slice mozzarella.  Starting at one long side, roll the Stromboli until you reach the end.  Press the dough end down to make a seam.  Squeeze the ends together to close.
Place the Stromboli seam side down on baking sheet.
Brush with egg wash (egg + 1 tablespoon water) on all sides.
Bake for 17 minutes or until golden brown.
